Let’s agree on street food. There is plenty of room to experiment. Looking around, there are countless examples of ordinary classic foods undergoing unique (sometimes strange) makeovers. Whether it’s Maggie-filled Golgapa or Gulab Jamun’s stuffing Paratha, one in two today is trying to get it ready for patrons. Some experiments turned out to be hits, but some elicit flakes and criticism. Next is the food innovation that tells the story. Take Gujarat’s “Kulhad Pizza” as an example. As the name suggests, you can tell that it is a pizza baked in a clay pot. But did you know that it’s also prepared in the same Kurhad! That is correct.
Gujarat’s food truck vendor, Surat, wanted all of India’s most beloved food, pizza. Instead of a regular pizza tray, he uses clay pots to prepare and sell pizza. Why? According to pizza maker Chirag Kalwani, this is his way of showing support for Prime Minister Narendra Modi’s “local voice” campaign.

“During the blockade of COVID-19, I heard Prime Minister Modi talking about’vocals for the locals’. I was already driving a food truck, and when I heard that, I thought about supporting the campaign and came up with the idea of making and selling pizza. “Kuruhad”. “Customers love pizza innovation,” Chirag Karwani told ANI, adding that “‘Kuruhad’ pizza is gaining popularity in the city.”
The customer said, “This pizza is very delicious and healthy because it doesn’t use bread. It’s also unique because it’s in Kuruhad.”
