Want To Explore Indore Street Food? Start With Bhutte Ki Khees Recipe This Monsoon

Every region of Indian has its own set of street foods that you only get there in their primitive form. If Delhi streets are full of samosa, kachori and momos, Mumbai will fill your heart will vada pav. The small city of Indore is also big on food. One of its street foods – bhutte ki kees is immensely popular there. Bhutta means corn and kees means grated. So, this Indore-special dish is made with crushed bhutte, flavoured with whole spices and cooked in milk. Bhutte ki kees is truly a special dish with its enticing melange of spiciness and creaminess. 

The monsoon season sees a whole lot of us digging into roasted bhutte. Travel to the hills and you’ll find a vendor selling butte on every turn. If you love those roasted corns, you’ll love the sweet and sour bhutte ki kees too. The taste of corn is so magical that no one ever can resist it. We have an easy recipe by none other than the celebrated chef Ajay Chopra who posted the recipe video on his Instagram page.

Chef Ajay Chopra shows us a simple way to make the Indore-style bhutte ki khees. First, crush the corns pulled off the cob. Now heat some groundnut oil in a pan. Roast some whole spices like saunf, laung, jeera, curry leaves, green chilli and ginger. Then put in the crushed corns. Roast it and then cook in some milk. Then add haldi powder, salt and Indore-special jeeravan masala. (You can skip it you don’t have it.) Also add some chopped coriander leaves. Let it all cook properly and serve warm.
