How to make Rajasthani Badam Shake:
To make this drink, you need milk, almonds, cashew nuts, almonds, pistachios, saffron, cardamom powder, custard powder and sugar.
- Place a heavy base pan on the flame and add 1 liter of milk to it. Bring to a boil over medium heat until the milk is 80%.
- While the milk is boiling, store 1/4 cup of milk to prevent it from boiling.
- Take the soaked almonds and add milk to make a coarse paste.
- When the milk begins to boil, turn the flame in a low medium, continue to stir, rub the side milk and mix with the milk.
- Pinch a pinch of saffron strands, add 1/2 teaspoon of cardamom powder and mix well.
- Take 1/4 cup of milk, add 1.5 teaspoons of custard powder and mix well. Then add the custard powder slowly and mix well with the boiling milk.
- Add 4 tablespoons of sugar and dissolve the sugar well. When the sugar is well dissolved, add almond paste, mix well and simmer for 2-3 minutes.
- Next, add some chopped dried fruits and mix well. Once you start coating the spatula, turn off the heat and transfer to a bowl to allow to cool.
- Bring to room temperature and store in the refrigerator for 3 hours to allow to cool completely.
